Lough Erne Resort invites guests to begin the year in true style with an unforgettable evening of fine dining and exceptional wines, hosted by one of Champagne’s most prestigious houses.
On Friday 27th February at 7pm, guests are invited to “A Sparkling Evening with Bollinger”: an exclusive seven-course pairing dinner hosted by Dan Ruell, Export Manager for Bollinger UK.
While Bollinger is world-renowned for its iconic Champagne, the evening promises much more than bubbles alone. Drawing on nearly 200 years of family heritage, the Bollinger family also owns Langlois-Chateau in the Loire Valley, allowing the menu to be paired with a more diverse wine selection and ensuring the experience appeals to both champagne lovers and wine enthusiasts alike.
Founded in 1829, Champagne Bollinger is celebrated for using traditional methods to craft wines of power, refinement and complexity, remaining fiercely independent and family-run to this day. Guests can expect an evening of indulgence, insight and expertly curated pairings, showcasing the full breadth of the Bollinger family portfolio.
The sparkling evening starts with a champagne reception. Awaken your palate with Lough Neagh Smoked Trout, served with Bollinger Special Cuvée brut champagne. Continue your journey through local and Old-World flavours with the Irish Cod Mosaic, served with Langlois-Chateau Saumur Blanc Vieilles Vignes, which features a rich, textured palate and balanced acidity, or the Manor Farm Chicken & Pork Terrine, accompanied by Bollinger Rosé, with notes of red berries, spice, brioche and honeycomb.
The main course, Thorn Hill Duck Breast, is beautifully complemented by
Langlois Saumur-Champigny Rouge Vieilles Vignes, a red with deep colour and aromas of black fruits. The evening comes to a close with a Spiced Pear Tart and Langlois Les Beaugrands Coteaux de Saumur, a dry white wine renowned for its complex aromas of quince, honey and candied fruits and great balance between richness and freshness.
